RUN WITH US BLOG

Come, run along with us as we share our joy of everything running.

I have two great loves in my life, running and food. One of the  best part about the running is that around Thanksgiving weight gain is not an issue. However, that doesn't mean runners shouldn't strive for a healthy diet. My favorite dessert all year round is actually pumpkin pie, but most of the ones you buy in the stores or in the bakery are loaded with sugar and pumpkins that were canned years before.  Try this healthy Pumpkin Pie Recipe alternative for your meal!

For the filling you will need:
- 2 cups of fresh pumpkin
-1 cup almond milk
- 1/2 teaspoon ground ginger
- a tiny amount of salt
- 3 tablespoons molasses ( add more for sweeter pie)
- 3 eggs beaten

For the crust:
- 3 cups of pecans
-1 teaspoon baking soda
- tiny amount of salt
-3 tablespoons of butter

All you need to do is grind the pie mixes together in a food processor or blender. Preheat the oven to 350 and bake the crust in a pie tin for 15 minutes. Mix all the pie filling together and fill the crust. Then put the pie into the fridge to cool for at least 90 minutes. Maybe go for a run while it cools. Then EAT! I found this recipe on a great blog and modified it to my own taste preference, you can do the same! Don't be afraid to change some ratios!

Have a Happy Thanksgiving runners!
