Finally, a great recipe for delicious pumpkin muffins that are grain-free.  It's hard to believe, but these yummy muffins with their

perfect texture are made with no flours,  just healthy good-for-you ingredients.

GoneForaRun Healthy Grain-free Pumpkin Muffins

  • 1 cup almond butter

  • ½ cup pumpkin puree

  • 2 whole eggs

  • ½ teaspoon baking soda

  • ¼ teaspoon fine sea salt

  • 2 tablespoon cinnamon

  • 1 tablespoon nutmeg

  • 1/4 tsp ground ginger (optional)

  • ⅓ cup maple syrup or honey

  • 1/2 cup of organic raisins


 

 

Instructions


  1. Preheat your oven to 350F

  2. Combine all of the ingredients (except the raisins) and mix until smooth. Add raisins and stir in well.

  3. Fill baking cups in muffin pan and bake for 15-20 minutes at 350F (centers should be firm)

  4. Cool the muffins for 15 minutes and enjoy!
